Take the (Carrot) Cake
My cousin had a birthday this week, and so I baked him a carrot cake.
The list keeps growing of people who love this cake, who hope or expect (um, husband) a carrot cake for their birthday or sometimes when their favorite team loses the SuperBowl.
This past summer I suggested to make this cake for a friend's birthday. She protested, "oh, you don't have to do it." Her 7-year-old son came up behind her and whispered (loudly), "Take the cake, mom!" I delivered it on her birthday!
Even kids like this carrot cake.
Growing up, my Bubbie Rose (bubbie is Yiddish for grandmother) made it for our special occasions or whenever we begged for it! I used to put a piece on my plate on its side and eat it all the way up to the frosting and then eat the frosting last. It was quite a cake-eating-ritual. But Bubbie says my cake is even better than hers...I think she's biased, because she likes me better than cake.
I have made a few adjustments to Bubbie's cake. I've replaced most of the oil with applesauce and I'm pretty free and easy with the measurements in general. It always comes out for me.
Here goes:
3 cups flour
2 cups sugar (technically you're supposed to sift with the flour but I often skip that part)
2 cups grated carrots (I usually throw 2 cups of baby carrots into the food processor and chop them up really finely)
1/2 cup oil
1 cup applesauce (I use the unsweetened kind and I think the unsweetend chunky is best, but it's hard to find.)
16 oz. crushed pineapple with juice
3 eggs (egg substitute works fine)
2 tsp baking soda
2 tsp vanilla
1 tsp cinnamon
1/2 tsp salt
1 1/2 cups chopped walnuts
Mix the dry ingredients.
Add the wet ingredients plus the nuts.
Put into a greased and floured 9x13 cake pan.
Bake at 350 (*325 if using a glass pan) degrees for 45 minutes to an hour.
Let cool completely.
Frosting:
Blend 8 oz cream cheese, 4 oz powdered sugar, 1/4 cup butter, a little vanilla and a splash of milk if needed in the food processor or mixer...spread on the cake and lick the spatula.
I have actually made this into a layer cake before but it's just too much work. I frost it right in the 9x13 pan and we never have any leftovers!!!

What with the election...and being there....and celebrating birthday after birthday after birthday....

Marketing -- the Bad and the Good
In case you're not on twitter, and perhaps not involved in the mommyblogland, you may have missed this offensive-to-moms ad by Motrin....in case they've taken it down (I really hope they do), read Amy's post which sums it all up nicely.
It's hard to see a company that's perhaps trying a little bit too hard to be "cool" while bashing a great deal that moms hold dear. I sent them an email and I hope you will too.
On the upside of marketing, check out Sears' holiday campaign.
It's a great "Wish Registry" for military families, including their stories in video. What a great way to get us all to realize that no matter how hard it may be, we all need to pitch in and help out, especially to those who are giving so much for our country.
So go check it out and help make someone's wishes come true.

Celebrating a Birthday
A big happy birthday to my darling husband.
He doesn't read my blog so I can say whatever I want to.
He is wonderful, this man.
He is crazy about me and our kids.
He is the most beloved teacher I know, the kids flock to him. He remembers their names and their stories.
He is a collector of lost souls. He keeps track of them, he takes care of them, he brings them into our family.
He is a connector, he brings people together. The ultimate matchmaker.
He is my beloved.
Happy birthday, honey, and many many more! I love you!

Why Spin Instructors are Like Rabbis
I think I've discovered why I like going to Spinning classes.
It's just like being at services, except I'm not in charge:
It lasts about an hour, just like services.
I can get into a rhythm, just like in a good prayer experience.
There's a rubric to follow. Sprints, climbs, flat roads....Sh'ma u'virchote-ha, Amidah, Torah service...
There's music, sometimes to sing along with....
There's a sense of shared purpose. We're all in this together.
There's a lot of stand-up, sit-down.*
The instructor uses her hands to indicate "stand up" and "sit down"... just like I do.*
She offers encouragement, similar to the way that a rabbi might offer explanations of the prayers.
She sometimes throws out questions for the group to answer, just as I might when leading services or giving a sermon.
People are often reticent to answer. Just like at services.
I can lose myself in the experience, and feel uplifted at the end.
Do I think that Spinning or exercise can replace a religious experience?
No.
But they do strike me as quite similar....
*This was the part that got me thinking during Spin class. Like any good blogger, I actually considered getting off my bike and jotting down some notes. It seemed like a reasonable excuse to take a break...but I didn't. I remembered anyway! See, working out is good for you.

Troubleshooting Tomatoes...and other questions
(I apologize in advance for the stream-of-consciousness post. I don't usually post like this but I feel the need for a brain dump. Blogland here I come!)
Have you seen this MyBlogLog? People have it all over, so I went to check it out. Now I have an account. Why do we all need so many accounts!? But I have them. How many do you have? (Ilana-Davita asked how many email addresses we have. How many "services" do you follow? I'm on flickr, del.icio.us, technorati, youtube, facebook, stumbleupon, twitter, and probably a few more that I don't even remember. What do you think is cool online?)
to my Gardening Friends (and anyone who has a good guess):
Why do my tomatoes have this dark spot under the stem on some of them
and this spotting on the leaves?
Am I in trouble here???? And when will they turn red and be edible!? The yellow plum ones are starting to turn yellow and lookplummy er, yummy. And my one chili pepper is beautiful but not red yet. Wonder what it would taste like....
FrumeSarah is hosting Haveil Havalim. I'm waiting patiently for it to show up.
Did you know you can re-arrange your blog list in Google Reader? Is this a new thing? Or have I been clueless. I hated how they started out in alphabetical order but somehow got all messed up. Now I have folders. Life is good. What feed reader do you use? How many feeds do you read? I have 229 subscriptions. Luckily they don't all post every day!
I have been hard at work on the PTA newsletter. Hopefully it will be done this week and then I can show you where my creative energies have been going over the last week or so.
We are moved back into our newly renovated synagogue building. I can't quite believe it, I still wander around and I'm so happy to have all my books (which have been in storage) back with me. I missed their cute little bookie faces. Have you ever lived through a renovation? Ugh.
Do you ever go back and read your old blog posts? I was just looking for something to link to in this very random post that I'm reading. I think I need to go back and read some...and then share with you my favorite posts. I'm making a list of posts for the next few weeks. Time to get organized, serious, and into High Holy Day mode. I had better line up the blog plan...Elul, here we come! How do you get ready for the High Holy Days? Anyone else out there thinking about the first of Tishrei already?
There was a whole piece on NPR this morning (on the way to Torah Study) about the liberal blogosphere. Did you know that is a real word? I kinda thought we made it up out here in blogland. Even cooler is the J-Blogosphere, which has its own Wikipedia entry. And of course, a convention, which I can't quite get to in person. Are you going? Wait, don't answer that. I don't want to be jealous of you. Okay, answer. I want to know. Even if I'm going to be jealous.
I hope I've given you lots of interesting questions to answer! Say hi even if you don't have any answers....

Things That Make Me Giggle and Clap
Now, go and look at the top of your screen, or the tab in Firefox or IE, and you will see that same little cute graphic (can you tell that it's my shoes from my blog header?) next to the name of my blog!!!!
It's called a favicon and I have wanted one for a while. But it was too hard to get Blogger to do it.
Then I came across this great blog called Blogger Buster and let me tell you, it rocks.
In this post about favicons, Blogger Buster Queen (Goddess?) Amanda tells you how to make it work in Blogger. And so I did it! (Then I shared with my husband, who agreed that it's cool. Big praise! For the big test: What do you think, Dad?) Personally, I giggled and clapped.
While we're on the subject of Blogger (which I'm quite content using, by the way), Blogger Buster is also running a cool contest.
Since I've never been shy about making my say, here's the feature I want from Blogger:
A simple, easy-to-use method for backing up my blog, for exporting all my posts and comments into an off-line site so that my paranoia about losing all my work on my blog can end. Please?
(Because this is the current method that Blogger recommends for backing up your blog. And it sounds scary and awful. No thank you. I'll stick with paranoia about losing it rather than actually doing the losing on my own!)
Oh, and numbered comments would be nice too. But I'll go with my first wish.

it's been a long and busy week. i've been barely keeping up...and definitely not reading/writing/responding to comments. sorry! but i've been out and about a little...so here are five places i've been this week...and here's to a new week of far more sleep and therefore far more motivation!

Opportunitiy to Help...and Five Places I've Been
The Bloggers helping Jeni auction is now up and running, arranged by the amazing Bella. This is an amazing opportunity to help out Jen Ballantyne, who blogs here at The Comfy Place. She is currently in hospice but still blogging, her latest post was about how much she wants to help others. Farfel & Cheese Casserole (and Five Places I've Been)
By popular request, from my recent post on Pesach cooking, here is the recipe for Farfel and Cheese Casserole. (Any one else missing the jewish-food.org archives? Where did they go?)
Farfel and Cheese Casserole
Original source: Laura Shomshak, via jewish-food.org
Yield 5-6 servings
3 1/2 cups matzah farfel (or 7 boards, crushed by your kids with rolling pins)
1/4 cup melted butter or margarine
3 large eggs
1 tsp salt
pepper, onion powder, garlic powder to taste
2 cups fat-free yogurt
1 cup milk
1/2 pound (or more) grated cheddar cheese
Combine ingredients in a bowl. Butter/grease a casserole dish. Transfer mix to casserole, bake at 350 degrees for about 45 minutes until brown on top and bubbly around the edges.
(If your family is adventurous, you could add mushrooms, spinach, or even a can of tuna to this recipe.)
